<p>Da buon bergamasco doc la polenta ha per me declinazioni che vanno oltre il gusto. La polenta è un piatto tipico che mi ricorda molto la mia povera nonna paterna, nata e vissuta in <a href="https://www.altobrembo.it/" target="_blank" rel="noopener">Alta ValBrembana</a>. Lei la faceva nella variante tipica delle sue montagne: la polenta taragna. La polenta è tra i piatti tipici bergamaschi più noti e la taragna è tra le varianti più conosciute e amate. La parola taragna deriva probabilmente da ‘tarèl’, ovvero il lungo bastone con cui si mescola la polenta. La taragna ha una larga diffusione nelle zone del Nord Italia, dove viene cucinata con formaggi diversi: nella variante di Bergamo si utilizzano il Branzi e il <a href="http://www.formaidemut.info/azienda/az-agricola-salvini-juri/" target="_blank" rel="noopener">Formai de Mut</a>.</p>
<p>Il legame col territorio, dall&#8217; infanzia a oggi, mi ha portato a conoscere storie e formaggi che vanno oltre il senso del &#8220;puramente commerciale&#8221;. Ogni volta che torno a <a href="https://www.vistafrontale.it/viaggi/mezzoldo-2024-festa-in-terzera/"><strong>Mezzoldo</strong></a>, paese natio di mia nonna, è obbligo far tappa allo <a href="http://www.formaidemut.info/azienda/az-agricola-salvini-juri/" target="_blank" rel="noopener">spaccio di formaggi</a> dei miei parenti.</p>
<p>Questa è la prima delle ricette che provo con la polenta avanzata. La più semplice e immediata credo. La prossima sarà sicuramente gli g<strong>nocchi con la polenta avanzata</strong>! Non vedo l&#8217; ora di provarla, ma ci vuole più tempo e pazienza.</p>

<p>Niente di più semplice ragazzi! La polenta rimasta la lasciate raffreddare e l&#8217; avvolgete in pellicola. La tenete in frigorifero qualche giorno al massimo. Il top sarebbe riutilizzarla entro tre giorni. La polenta così solidifica e tolta del frigo la troverete abbastanza compatta.</p>
<p>Quando decidete di riutilizzarla toglietela dal frigo un&#8217; ora prima. In un padella con un filo d&#8217; olio rosolate le fette di bacon e tenetele da parte. Mettete nella stessa  padella dell&#8217; olio per friggere e scaldatelo. Tagliate a fette la polenta e friggetela sui due lati. Prima di toglierla poggiatevi la pancetta che si scalda un pò e poi il piatto è praticamente pronto!</p>
<p>Per un effetto più light è comunque possibile fare lo stesso procedimento al forno. La polenta riscaldata al forno con pancetta è leggermento meno crunch ma lo stesso buonissima!</p>
